Super Easy Supper

I have a super easy recipe for a quick supper. My mom found this recipe in a 2004 issue of Southern Living. It has been one of my recipe staples since then.

Chicken Olé Foil Supper

Tear four sheets of aluminum foil and lightly grease. After placing a boneless skinless chicken breast on each piece of aluminum foil, sprinkle the chicken with salt and pepper. Then layer salsa, black beans and corn. Wrap each chicken in a packet, and bake in a 450 degree oven for 20 minutes. Make sure you are careful when opening the packet after its baked. The last step is to sprinkle the chicken with cheese and other garnishes, such as cilantro, as desired.
